- black-eyed peas
- broth
- butter
- fresh lemon juice
- red pepper flakes
- salt & fresh ground pepper
- clean & rinse peas
- put peas in large heavy pot w/ just enough water to cover & a good amount of salt
- cook peas on low until water is absorbed
- add broth to cover peas and continue cooking on low
- when peas are cook how you like them stir in lots of butter, as many pepper flakes as you can stand and fresh lemon juice, zest too if you want
- salt & pepper individual servings to taste
I'd serve it w/ rice and braised winter greens.
