Jambalaya-ish

Fed 6 people
  • .75 cup brown rice
  • one large carrot sliced in rounds
  • .5 lb stir fry chicken chunks
  • one yellow onion chopped
  • two ribs celery sliced
  • .5 large red bell pepper roughly chopped
  • .5 large green bell pepper roughly chopped
  • .5 cup frozen corn
  • four andoullie sausages, cut into half inch pieces
  • .5 cup fresh basil leaves
  • one cup dry white wine
  • one can chicken broth
  • fresh & dry thyme
  • fresh & dry oregano
  • minced garlic
  • garlic powder
  • paprika
  • salt
  • cayenne
  • red pepper flakes
  • dried crumbled or chopped bay leaves
  1. layer first set of ingredients in order in crock pot
  2. mix spices w/ a small amount of the wine in large container to taste
  3. mix rest of wine & chicken broth with spices
  4. stir well
  5. pour spice broth over stuff in crock-pot
  6. set pot cook at high heat and walk away
  7. when the rice on the bottom is edible it's done! (3-4 hours on high, you could probably cook it on low while at work all day)
This was way better than I thought it'd be for a first try. Waaaay better, like I wish I'd actually written down what I was doing while cooking good. There may have been another vegetable in there I'm forgetting, and likely a few more spices, will update as memory serves.

I think the potential to recreate this many times over using seasonal vegetables is limitless.
